Chocolate Obsessions
Since the times of the Greeks and Romans these fungi have been used in Europe as delicacies, as aphrodisiacs, and as medicines. They are among the most expensive of the world's natural foods.
The flavor of the truffle is directly related to its aroma. The chemicals necessary for the odor to develop are created only after the spores are mature enough for release, so they must be collected at the proper time or they will have little taste. This is the only sure indication that the mushrooms are ready to be harvested. That is why animals have proven to be the best means of assuring that the fungi collected will be flavorful.

The Classic Ganache Truffle is a round bittersweet truffle. Made by rolling the ganache into a ball and covering it with a thin layer of pure chocolate powder, making it look exactly like those lumpy little things that are the actual truffle rooted up by pigs in France and the lowlands, after which the chocolate truffle was named because it resembles the edible fungus of the tuber family.
Oddly enough the chocolate truffle has been found to have much of the same qualities as it inspiration the fungi truffle. Chocolate Truffles are most definitely a delicacy. Chocolate has been known to possess some aphrodisiac properties from some time now. And, recently more and more reports are being published (inside and outside) the medical community detailing chocolates benefits to health.
I very much prefer the simple pure chocolate powder coating of the classic truffle. Okay, sometimes I like the contrast of the firm chocolate coating and soft insides in the Coated Truffles. However, for shear bliss exploring the soft textures of the Classic can't be beat. So far I have identified three separate form changes of this truffle as it slowly melts in my mouth. Granted this sounds a bit like a science project, but, boy what a project. Can't wait for the next box to arrive. Thanks again for these great truffles."

We find this an elegant control for a page that could otherwise become a jumble of graphics.
Even if javascript is not available. The alternate views are left in small versions only. But, they are there in principle.
